happy lunch roll


Ingredients: sushi rice, mozzarella string cheese (in sixths), roast turkey breast (sliced in strips), avocado, baby carrots, nori sheet (thin strip with faces made by nori cutters ).

(Those hard-boiled eggs are from my first try with the Dream Land Egg Shaper. It’s quite a labor intensive gadget, but how much fun are hard boiled eggs with star, heart, flower and diamond shaped yolks? I think I’m going to try a bit of non-stick spray next time in the hopes of making the process a bit less, well… sticky.)
I had to share this serendipitous baking occurrence:

I couldn’t bring myself to tear those muffins apart. However, onefish took care of that problem when I turned to put my camera on the counter. I looked back to find one lonely muffin left on the table, and a self-satisfied toddler running towards the back porch to devour his spoils.

I had some help from onefish making this delicious pizza:

We didn’t get too elaborate with the pepperoni because, as it turns out, even metal cookie cutters have a hard time slicing through the spiced meat. Still, bluefish gave it two thumbs up. Next time, I think we’ll try some different veggies and some thinly sliced chicken breast. Oh, and we’ll make the dough from scratch.

This time I actually made sushi rice (complete with rice vinegar, sugar and salt) and I added cucumber to the mix to keep the avocado and carrots company. And, I shaved fresh ginger for the eating. The finished product was delightful. Even bluefish gobbled them up without pause.
